Sometimes you just need a brand new idea for something sweet.  I do believe it’s possible to get a little burned out on chocolate, and though I love the concept of blondies, I hadn’t yet found the ones I wanted to make and eat over and over.

Enter these Cinnamon Toffee Blondie beauties…

This takes your ho-hum blondie and skyrockets it out of the park with the addition of cinnamon and toffee.  Yeah.  I know.  Drool.  They still have that chewy brownie texture you love, but a whole new fantastic twist on flavor.  You’ll see what I mean.

 To start, in a saucepan, heat 3 c. of brown sugar with 1 c. (2 sticks) of butter until hot and caramel-like.   Remove from heat and let it cool.

Next, preheat your oven to 350 degrees.  

Also, line a 9×13″ baking dish with parchment paper and grease it with butter or coconut oil.

Mix together the following dry ingredients in a bowl:

2 c. flour

2 tsp. salt

3/4 tsp. baking powder

1/2 tsp. cinnamon.

In a separate bowl, mix together 4 eggs,

and 1 T. of vanilla.

Add cooled butter/brown sugar mixture slowly in to eggs and vanilla.  Whisk in the flour mixture until combined.

Fold in 5 crushed toffee candy bars (I used Heath),

and 1 c. cinnamon chips (found next to chocolate chips in the baking aisle).

Pour this loveliness into the parchment lined baking dish and bake in preheated oven for 32-37 minutes or until the top begins to crack and a toothpick comes out clean.

Remove to a cooling rack and let completely cool before you lift the parchment paper out and cut these beauties into bars.  Mmmm…they are so rich and spicy and delicious.  And I guarantee you’ll be the original one when you bring these to your next event!
