Sausage and Lentil Soup
 
 
A hearty, savory soup packed full of veggies, lentils, beans and spices.

Grocery List
  • 1 large onion
  • 2 large carrots
  • 1 zucchini
  • 3 medium garlic cloves
  • 1 lb. Italian sausage
  • 2 -- 15 oz. cans diced tomatoes
  • 6 c. chicken broth,
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 tsp. Italian seasoning
  • ½ tsp. crushed red pepper
  • 1 c. dry lentils
  • 2 c. cooked northern beans
Here's how...
  1. Chop onion, carrots, zucchini and garlic. Brown sausage in a large soup pot. Drain the grease and add the veggies and stir and let sauté for 2-3 minutes. Add tomatoes or tomato sauce, chicken broth, seasonings, lentils and beans. Bring to a boil and the reduce heat to low and let simmer for at least one hour.
  2. Serve with freshly grated Parmesan cheese.
