Homemade Caramel Corn

Serves: 20 cups
- ½ c. butter
- 2 c. brown sugar
- 1 tsp. salt
- ½ c. corn syrup
- ½ tsp. baking soda
- 1 tsp. vanilla
- 20 c. popped popcorn (1 c. kernels)
- Pop popcorn to equal 20 cups. Spread evenly in two buttered rimmed baking sheets.
- Melt butter over medium heat and add brown sugar, salt, and corn syrup.
- Bring to a boil stirring constantly.
- Let boil for four minutes without stirring.
- Remove from heat and add baking soda and vanilla.Stir.
- Preheat oven to 250 degrees.
- Pour the caramel over the popcorn and stir to coat.
- Bake for 30 minutes, stirring after 15 minutes.
- Let cool in pan, and then break into pieces and move to a container to store.
