Homemade Caramel Corn

Hot, homemade caramel drizzled over freshly popped popcorn and baked until hot and crunchy

Serves: 20 cups
Grocery List
  • ½ c. butter
  • 2 c. brown sugar
  • 1 tsp. salt
  • ½ c. corn syrup
  • ½ tsp. baking soda
  • 1 tsp. vanilla
  • 20 c. popped popcorn (1 c. kernels)
Here's how...
  1. Pop popcorn to equal 20 cups. Spread evenly in two buttered rimmed baking sheets.
  2. Melt butter over medium heat and add brown sugar, salt, and corn syrup.
  3. Bring to a boil stirring constantly.
  4. Let boil for four minutes without stirring.
  5. Remove from heat and add baking soda and vanilla.Stir.
  6. Preheat oven to 250 degrees.
  7. Pour the caramel over the popcorn and stir to coat.
  8. Bake for 30 minutes, stirring after 15 minutes.
  9. Let cool in pan, and then break into pieces and move to a container to store.
