Creamy coconut-ty rice sweetened a bit with coconut milk and bursts of pineapple goodness make this side dish a delicious pantry staple stand-by.

  • 1 can full fat coconut milk
  • 1 can pineapple chunks or tidbits
  • water
  • 2 cups white rice
Here's how...
  1. Drain pineapple, reserving the juice.
  2. Whip the coconut milk until the separated parts in the can combine.
  3. Add water to the drained pineapple juice to make 2 cups.
  4. Combine coconut milk, pineapple juice and water, 1 tsp. salt, and 2 cups uncooked rice to a pot and bring to a boil.
  5. Reduce heat to low, cover, and let simmer for 15-25 minute or until all liquid is absorbed and rice is tender.
  6. Fluff with a fork.
