Caramelized Onion Dip with Bacon and Gruyere

Serves: 6 servings
- 1 large onion
- 2 T. brown sugar
- 1 T. balsamic vinegar
- 8 oz. cream cheese
- ½ c. sour cream
- 2 T. mayo
- 2 T. Worcestershire sauce
- ¼ c. freshly grated Parmesan
- salt and pepper
- ½ c. Gruyere
- 3 slices bacon
- Fry bacon, drain and set aside.
- Preheat oven to 375 degrees.
- Slice a large onion into thin slices and drop them into a hot pan (over medium heat) with 2 T. olive oil (or refined coconut oil or butter).
- Add in brown sugar, and balsamic vinegar Let it cook, stirring often for 10-15 minutes or so or until the onions turn into soft, caramelized ribbons.
- Salt and pepper the onions to taste.
- Remove the onion pan from the heat and stir in the following ingredients: cream cheese, sour cream, mayonnaise, Parmesan, and Worcestershire.
- Stir all the ingredients together, and let them melt together until it's all creamy and perfect. Adjust salt and pepper to taste.
- Scoop it into a 1 qt. casserole dish (8x8" will work well) and sprinkle with freshly grated Gruyere and the crumbled bacon.
- Bake for 15 minutes at 375 degrees.
- Serve with crackers or pita chips or crisp toast.
