Must-Have Mango Salsa

It's a delightful blend of sweet and a bit spicy (totally adjustable to taste) and comes together in minutes. Perfect on fish or chicken or tacos or as a snack.

Serves: 4-6 servings
Grocery List
  • 2-3 cups of diced mangoes
  • ⅓ c. chopped onion
  • 1 jalapeno
  • ½-1 bell pepper
  • 3 T. lime juice
  • ¼ tsp. salt (or to taste)
  • Cilantro (optional)
Here's how...
  1. Dice up two ripe (nice and soft) mangoes to equal about 2-3 cups.
  2. Dice ⅓ cup onion (red or white).
  3. Remove the seeds and pith from one jalapeƱo pepper and dice it finely. It won't be super spicy since the seeds have been removed.
  4. Dice one half (or up to a whole depending on size) of a red, orange, green, or yellow bell pepper.
  5. Throw it all in a bowl and add 3 T. of fresh lime juice.
  6. Stir to combine and then cover and let the flavors marry for a bit in the fridge
