Serves: 4 gyros
Grocery List
Lemony Basil Chicken:
1 lb. chicken breasts
The juice of 1 lemon (about 2 Tablespoons)
¼ c. olive oil
1 tsp. dried or fresh basil
1 tsp. garlic powder
½ tsp. onion powder
½ tsp. salt
¼ tsp. pepper
¼ tsp. Italian seasoning
¼ tsp. yellow mustard
Dash of red pepper flakes (optional)
Tzatziki Sauce:
1 c. Greek yogurt
½ c. finely chopped and drained cucumbers
2 large garlic cloves, finely diced (1 T. or so)
T. fresh dill or 1 tsp. dried dill weed
1 tsp. red wine vinegar
Salt and pepper to taste
2 T. olive oil
1 T. fresh lemon juice
Additional items:
Naan or Gyro bread
Feta cheese
Optional items:
Cucumbers
Tomatoes
Fresh dill
Red onions
Here's how...
Marinate the chicken in a bag with the marinade ingredients for 3-5 hours.
Chop the cucumbers and drain in a colander over a bowl, sprinkled with salt for 15 minutes to remove excess water.
Mix Tzatziki ingredients well in a bowl and let chill.
Grill or saute the chicken until cooked until 160-165 degrees. Let rest for 5 minutes.
Heat the bread to char and heat through in a dry skillet.
Assemble the gyros with bread, chicken, tzatziki sauce, and feta. Add any additional loveliness such as fresh tomatoes, cucumbers, dill, and onions.
