1 c. powdered sugar
2 T. melted butter
1 c. creamy peanut butter
1½ c. crispy rice cereal
1½ c. milk chocolate chips
½ T. refined coconut oil
Here's how...
Let your mixer mix the powdered sugar, butter, peanut butter, and cereal.
Form this mixture into balls around 1 inch big or so depending on how many people you'd like to serve.
Chill them in the fridge while you melt the chocolate or until they're not sticky to work with.
In a double boiler (I use a bowl over a saucepan with 2 inches of boiling water and stir until the chocolate melts), melt 1½ c. milk chocolate chips with ½ T. refined coconut oil which will help the chocolate set up well.
Dip the chilled pb balls into the melted chocolate to coat about ⅓ of each ball. Set it on a platter and chill to store. Serve at room temperature.
