Chewy Peanut Butter Blondies

Chewy, peanutty, dense in the middle with the perfect corner bites, these babies are studded with white chocolate, simple to make and most delicious to eat!

  • ½ c. butter
  • ½ c. peanut butter
  • 1¾ c. dark brown sugar
  • 2 eggs
  • ½ tsp. salt
  • 2 c. flour
  • 1 tsp. baking powder
  • 1 c. white chocolate chips
  • ½ tsp. kosher salt or flaky sea salt
Here's how...
  1. Preheat the oven to 350.
  2. Line an 8 x 11" or 9 x 13" with parchment paper and spray the paper with coconut oil spray or brush with melted butter.
  3. Melt the butter and mix it with peanut butter and the brown sugar.
  4. Add eggs one at a time and mix well.
  5. In a separate bowl, mix the flour and baking powder.
  6. Add dry ingredients to the peanut butter mixture.
  7. Stir in the white chocolate chips.
  8. Spread the mixture into the baking dish and sprinkle with the extra salt.
  9. Bake at 350 for 35 minutes checking after 30. Remove when the top is golden brown.
  10. Let cool in the pan for 30 minutes before removing to cut.
