Lemon Chicken Pasta

Buttery, bright, and beautiful in its simplicity, this pasta dish comes together in minutes starting with uncooked pasta, chicken, and lots of lemon baked in one dish!

Serves: 4-6 servings
Grocery List
  • 1 lb. chicken breasts or tenders
  • salt and pepper
  • 3 c. chicken broth or stock
  • 3 T. melted butter
  • 2 T. kosher or sea salt
  • 2 T. fresh dill or ½-1 tsp. dill weed
  • 3 lemons
  • 1 clove garlic
  • 1 tsp. cornstarch
  • 2 c. small pasta shells or orzo pasta
Here's how...
  1. Preheat oven to 375 degrees
  2. Slice chicken breasts into tenders if needed. Season with salt and pepper.
  3. Zest all 3 lemons. Slice one and juice the remaining two.
  4. In a bowl, whisk the chicken broth, butter, salt, dill, lemon juice and zest, chopped garlic, and cornstarch.
  5. Stir pasta into the bowl with the lemon mixture.
  6. Pour all of it into a 9 x 13" baking dish.
  7. Lay chicken tenders over the top and garnish with lemon slices.
  8. Bake for approx. 30 minutes or until chicken is cooked through to 165 degrees internally.
