Alison:
Recipe type: Dessert
Serves: 1 pie
Grocery List
  • 1½ c. crushed graham cracker crumbs
  • ¼ sugar
  • 4 T. melted butter
  • 8 oz. cream cheese
  • 14 oz. sweetened condensed milk
  • ¾ c. lemonade concentrate (starts frozen--you'll thaw it)
  • 2 T. fresh lemon juice
  • 1 c. heavy whipping cream
  • 4 T. powdered sugar
  • 1 tsp. vanilla
  • ⅓ c. coconut
Here's how...
  1. Preheat oven to 350 degrees.
  2. In a food processor, or with a rolling pin and plastic bag, crush the graham crackers and mix in the melted butter. Press this crust mixture into a springform pan, along the bottom and up the sides a few inches.
  3. Bake for 8-10 minutes and let cool.
  4. Using a whip attachment, beat softened cream cheese and slowly add in sweetened condensed milk, thawed lemonade concentrate, and freshly squeezed lemon juice.
  5. Pour the lemon filling into the cooled crust and place it in the freezer.
  6. Whip the heavy cream until stiff adding in powdered sugar and vanilla at the end. Add this to the somewhat frozen pie and garnish with toasted coconut.
  7. Cover and freeze until serving time.
