Because what is better than Gooey Chocolate Cobbler easily made with pantry ingredients into a showstopping, dessert with a molten center and crispy edges? Not much, I tell you. This one tastes as amazing as it looks!
And easy!! Did I forget to mention that it’s as easy as can be? I made this once for my daughter and her family when they weren’t feeling well. I needed something quick, sweet, and comfort food-y to whip up with ingredients I already had in my kitchen to go along with a big pot of Perfect Chicken Noodle Soup with Homemade Noodles. She texted me later to ask “What is this chocolate-y, magical goodness?!?” That’s how this became a dessert staple at our house. And friends, I don’t even like chocolate cake, but this…this somehow bypasses that into fudgy, molten goodness.
So, here’s how it’s done…
Preheat your oven to 350 degrees.
Begin to heat 1 c. water to a simmer.
In a mixing bowl, combine the following ingredients and pour them into a 9×13″ baking dish:
1 c. (2 sticks) melted butter,
1 1/2 c. all-purpose flour,
1 c. milk
1 1/2 tsp. baking powder,
1/4 tsp. salt,
1 1/2 c. sugar,
and 1 T. vanilla.
In a small bowl, mix 6 T. cocoa powder, and the remaining 1 c. of sugar. Sift this over the top of the ingredients already in the baking dish. Do not stir!
Pour the hot water over the top of the whole thing (again, do not stir) and bake until the top feels firm (the center will be gooey), 30-35 minutes.
And that’s it! Have plenty of vanilla bean ice cream to serve with it and be prepared for some serious ooooh’s and ahhhhhh’s when that fudgy, molten center reveals itself!
