Lemon Curd:
The zest of two lemons,
¼ c. fresh lemon juice,
⅓ c. sugar
4 egg yolks
3 T. butter
Crumb mixture:
½ c. butter
¾ c. sugar
1½ c. unbleached flour
¼ tsp. salt
Here's how...
Lemon Curd:
In a double boiler bowl, add the zest, juice, sugar, egg yolks, and butter.
Heat the water and constantly whisk the ingredients together heating to 160 degrees at which point, the mixture will suddenly thicken.
Remove it from the heat and spoon it into a jar or small bowl. I use a pint jar and put the lid on or you can cover the curd with plastic wrap to help prevent a skin from forming on the top. Put it in the fridge to let cool; it will thicken more as it cools.
Crumb mixture:
In a mixing bowl beat the butter and sugar.
Add in flour and salt and mix well until the mixture looks like crumbs. It will be very soft with small crumbs.
Reserve ¾ cup for the topping and press the rest into a 9" x 9" square or an 8" x 6" rectangular baking dish.
Preheat the oven to 350 degrees.
Spread the cooled lemon curd over the base crumbs.
Pour the remaining ¾ c. of crumbs over the top and spread them evenly.
Bake for 45 minutes or until just a bit of golden brown color shows on some of the crumb topping. Let cool on a wire rack until completely cooled and then cut into bars.

❄️Two of our kids are coming over tonight for dessert. This is all I could imagine to make for them. We are absolutely buried in several feet of snow up here and the work that much snow requires has everyone weary -- and winter has just begun! I'm hoping this is a bit of a spoonful of sugar to help the January go down. ❄️
Goozy cinnamon roll filling draped and dripping from atop perfectly creamy little squares of cheesecake. These are all of the cinnamon-roll-love without the work!

12 cinnamon graham crackers
¼ c. sugar
1 T. cinnamon
½ c. butter
2 - 8 oz. blocks of room temperature cream cheese
1 egg
⅓ c. sugar
2 tsp. vanilla
¼ butter
1-2 T. cinnamon (yes, that's Tablespoons) we really like cinnamon at our house)
½ c. brown sugar
1 T. flour
½ tsp. vanilla
Here's how...
Preheat the oven to 350 degrees.
Either use a food processor and crush 12 cinnamon graham crackers with ¼ c. sugar and 1 T. (Tablespoon) cinnamon and add in ½ c. melted butter. OR, use a rolling pin to smash the crackers to crumbs and then add the sugar, cinnamon, and butter in a bowl and stir to combine.
Press this into a foil-lined and buttered (by this, I mean butter the foil) 8"x11" baking dish and bake at 350 degrees for 5 minutes.
Prepare the filling by mixing the cream cheese, egg, sugar, and vanilla well with a mixer. Using the egg and cream cheese at room temperature will help prevent lumps.
In a small saucepan, melt the topping ingredients: brown sugar, cinnamon, flour, butter, and vanilla.
Pour the cheesecake filling over the top of the crust and the filling on top of the cheesecake.
Use a butter knife to swirl the topping into the cheesecakes.
Bake at 350 for 20-30 minutes or until the filling is set all the way to the middle.
Let cool completely.
Store in the refrigerator.

Creamy, cheesy, perfectly potato-y soup, rich in flavor and simple as can be, this is the soul-warming pot of soup you need today!

Here is the recipe in case the link doesn't quite work yet (computer guy still trouble-shooting)...
1 lb bacon
2 stalks celery (plus leaves)
1 medium onion
3 cloves garlic
8-12 medium potatoes
6 cups chicken stock or broth (may need more)
4 T. butter
½ c. flour
1 c. whole milk or heavy cream
salt and pepper
Here's how...
Fry the bacon in a soup pot until crispy. Remove from the heat and drain leaving about ¼ c. grease in the pot.
Chop celery, onion, and garlic. Peel and cube about 12 medium potatoes.
Add the celery and onion to the grease and sauté until clear. Add in the garlic and cook another minute or so. Add in the potatoes, stirring to coat. Sauté for another 4 minutes.
Cover the veggies with chicken broth or stock. Bring to a boil and then reduce heat to simmer until the potatoes are fork-tender.
About a half hour before serving, melt butter over medium heat in a saucepan. Whisk in ½ c. flour and cook, whisking constantly for 2-3 minutes to cook off the flour taste. Whisk in milk or cream and bring just to a boil stirring constantly. Sauce will thicken when it is hot enough.
Scoop two cups of broth from the soup pot and whisk it into the butter/flour mixture, then add the whole mixture to the soup pot. Use an immersion blender to blend some of the potatoes to thicken the soup.
When heated and thickened, season with salt and pepper to taste.
Garnish with freshly shredded Cheddar cheese and the bacon.

6 cups whole milk
2 c. milk or semisweet chocolate chips
1 can sweetened condensed milk
1½ c. heavy whipping cream
1 tsp. vanilla
¼ tsp. salt
Here's how...
To a medium pot, add all of the ingredients and heat on low, stirring frequently until the chocolate is fully melted. Serve warm with whipped cream, marshmallows, extra chocolate, and peppermint candy!

For when you need to start pretending it's not turkey anymore and instead transform it magically into the most delicious soup you've ever had...

Ingredients:
6 cups of chicken broth or stock
5 cups of water
1 box Uncle Ben's Long Grain and Wild Rice mix (chicken flavor) -- or your favorite organic boxed long grain and wild rice mix with seasoning packet
8 slices of bacon
¾ tsp. salt
½ tsp. pepper
½ tsp. poultry seasoning
1 c. flour
½ c. butter
3 cups of whole milk
2 cups of cooked, shredded turkey or chicken.
Here's how...
Put chicken stock and water in a soup pot.
Add in the box of rice and the seasoning packet. Bring to boil. Once boiling, reduce the heat to a simmer and cook for 25 minutes or until the rice is fully cooked.
Fry the bacon until crispy, drain and set aside.
Mix together flour, salt, pepper, and poultry seasoning.
Melt the butter and add in the flour/seasoning mixture and whisk together until blended well. Cook for 2-3 minutes.
Add in the milk and whisk continuously until a low boil when it will thicken substantially.
Add about two cups of the broth into the creamy mixture and whisk until well combined. Then, pour it into the big pot and stir.
Add in the turkey or chicken.
Cook until warmed through and thickened, stirring frequently to avoid burning on the bottom of the pot.
Garnish with bacon to serve.

🍁Make the most pinned Mac and Cheese on Pinterest! MILLIONS (yup, you read that right) of TWN fans can't be wrong. It's become a staple in lots of homes so if you need that *one more thing,* I've got you.
And one last time before Thanksgiving, here's the recipe!
Ingredients:
1 lb. pasta of your choice
1/2 c. butter
1/2 c. flour
4 c. milk
6 c. freshly shredded sharp or white Cheddar
1/2 T. Kosher or sea salt
1/2 T. pepper
2 T. butter
1/2 c. panko bread crumbs
Instructions:
Boil pasta in salted water according to package directions.
Melt butter in large saucepan over medium heat. Sprinkle in flour and whisk and cook 2-3 minutes. Add in salt and pepper.
Slowly pour in 4 c. milk whisking until smooth and heating to a low boil until thickened. Do not stop whisking and cooking until thick. Remove from heat.
Grease a 9x13" baking dish and add the hot pasta to the dish. Over the top sprinkle 6 c. of freshly shredded cheese.
Pour the thickened cream sauce over the hot pasta and cheese and let it sit until the cheese melts. Stir everything together.
Melt 2 T. butter over medium heat. Add in panko bread crumbs, stirring constantly 3-5 minutes or until golden brown.
Sprinkle the breadcrumbs over the mac and cheese.
Bake in a preheated 325 degree oven 12-15 minutes.

These are the best way you can make Feast Day less stressful. I utilize every opportunity to assemble a dish the days before, and then just bake it just before dinner Thursday. I do this with most of my vegetables and sides and even my apple pies!

💥Day 3 of Hosting the Thanksgiving Meal Tips!
Today is a great day for lists and prep work because life doesn't stop to make the feast so a little at a time throughout this week is needed!
Today, I write down all of the things I'm making on which day of the week I've assigned it to (🌟PRO-tip -- save this list for next year!!).
I also add things to my list like tidying the house and setting the table. I will do prep work today like making room in the fridge, make pie crusts, bake sweet potatoes (makes for easier prep of the dish later), chop veggies for stuffing, and cut cheese slices for the appetizer board. Annnnd turkeys get started in their brine bath today to cook tomorrow (see previous post). Don't forget to think of your easiest meals to eat over the next few days while cooking!
