I am about to revolutionize your pizza-eating world.
Well, this method surely revolutionized mine when I moved to the middle of nowhere without pizza delivery as an option! Because this looks like something I would pay money for when in fact, it was ready in minutes! With a crispy crust just like you love on your favorite thin-crust pizza, and made with your favorite toppings or whatever you have in your pantry and fridge, this is a win for lunch or dinner or easy snack. These single-serving pizzas are beyond delicious because the cheese crisps up at the edges and the magical crust works as the perfect medium to get those amazing toppings to your mouth.

The possibilities are endless. Name your favorite toppings and it is possible. All on a flour tortilla crust that requires no mixes, no kneading, no waiting. Just pizza in 2 1/2 minutes. Yes, people. Less than THREE minutes. And wayyyy cheaper than delivery!
For the best results, you’ll need a cast iron pan. You can use a baking sheet according to the interwebs, but for all these years, a cast iron and a little coconut oil has created the texture on my tortilla nice and crisp — just the way we love it!!
Start by choosing your toppings! I’ve made BBQ chicken, chicken bacon ranch, cheese, pepperoni, tomato and basil, ham and pineapple, sausage and peppers — the sky is the limit.
- Get all your toppings chopped and ready.
- Put a cast iron skillet into the oven with a couple teaspoons of coconut oil into it, and turn on the broiler on high to get that pan nice and hot — usually about 5 minutes.
- While the skillet is heating, spread some pizza sauce on your flour tortilla and add your toppings including the mozzarella.
- Take the skillet out and set your prepared pizza into the hot skillet. Set it in the oven and let it broil for 2-4 minutes watching closely for the edges to crisp and the cheese to bubble. As soon as you see that magic, remove the skillet and use a metal spatula to remove the pizza. If you’re making several, add the next pizza and repeat! You may need to add a bit more coconut oil as you go depending on how many pizzas you make. I like to get a nice sizzle when I add my tortilla to the hot oil.

That’s it! That’s all it takes to be a pizzeria in your home with no muss, no fuss, no real crust! Enjoy!!!!

These are absolutely delicious and my whole family adores them! When trying to make several at once I have used a sheet pan and broil the tortillas on one side until golden and then the other side (watch the whole time so they don’t burn!). Top with your favorite toppings and put back until bubbly and amazing. Thanks for such a great way to make pizza so delicious and fast!
