Loaded Roast Beef and Bleu Sliders

- 1 lb. or about 2 c. leftover beef roast
- 1 large onion
- 1 clove garlic
- 8 oz. mushrooms
- olive oil
- ¼ c. mayonnaise
- 2 tsp. horseradish sauce
- ⅛ tsp. pepper
- 1 pkg. Hawaiian Rolls
- 4 oz. Bleu Cheese1 stick (1/2 c. butter)
- 2 tsp. poppy seeds
- 2 tsp. dehydrated onion
- 1 tsp. sugar
- 2 tsp. steak sauce
- In a saucepan, add onion, garlic, and mushrooms to the olive oil. Sauté until soft and set aside.
- In a small bowl, mix mayonnaise, horseradish, and pepper.
- Slice the rolls in half and spread the sauce onto the bottom half. Add beef, and then the mushrooms and onions. Crumble bleu cheese over the top.
- In a small saucepan, combine butter, poppyseed, dehydrated onion, sugar and steak sauce. Pour the melted butter and seasonings over the sandwiches.
- Cover and bake in a preheated 375 degree oven for 10 minutes and uncover and bake 5-10 minutes more.
