Sausage and Lentil Soup

- 1 large onion
- 2 large carrots
- 1 zucchini
- 3 medium garlic cloves
- 1 lb. Italian sausage
- 2 -- 15 oz. cans diced tomatoes
- 6 c. chicken broth,
- 1 tsp. salt
- 1 tsp. pepper
- 2 tsp. Italian seasoning
- ½ tsp. crushed red pepper
- 1 c. dry lentils
- 2 c. cooked northern beans
- Chop onion, carrots, zucchini and garlic. Brown sausage in a large soup pot. Drain the grease and add the veggies and stir and let sauté for 2-3 minutes. Add tomatoes or tomato sauce, chicken broth, seasonings, lentils and beans. Bring to a boil and the reduce heat to low and let simmer for at least one hour.
- Serve with freshly grated Parmesan cheese.
