Filled with sausage, kale, and orzo pasta, this savory soup has a punch of flavor and heartiness in a quick and simple soup that can be ready in under half an hour.

  • 1 c. celery (include some of the leaves for extra nutrition),
  • 1 c. onion,
  • 6 cloves of garlic.
  • 1 lb. pork sausage
  • 2 cups orzo pasta
  • 4 c. (30-32 oz.) tomatoes or tomato juice (depending on the texture you'd like in your finished product),
  • 6 cups chicken broth or stock
  • 2 T. Italian seasoning
  • 2 tsp. salt
  • 1 tsp. pepper
  • ½-1 tsp. crushed red pepper (optional)
  • 1 bunch washed and chopped kale
Here's how...
  1. Chop the celery, onion, and garlic.
  2. In a large soup pot, drizzle 2-3 T olive oil and heat over medium heat. Add the celery, onion and garlic to the hot pot.
  3. Add sausage to the pot and brown until no longer pink.
  4. Add in orzo pasta and let brown for 2-3 minutes before adding in the tomatoes, chicken broth or stock, and seasonings.
  5. Bring to a boil and then reduce to a simmer for 15 minutes or so until the pasta is cooked.
  6. Add in 1 bunch of washed, chopped kale and let it wilt for just a few minutes.
  7. Season to taste.
