Frosted Maple Oatmeal Cookies -- Chewy, buttery, maple-y, pretty much perfect cookies, filled with oats and drizzled with a maple glaze.

  • 1 c. butter
  • 1 c. dark brown sugar
  • ¾ c. sugar
  • 1 large egg
  • ½ tsp. maple flavor
  • ½ tsp. vanilla
  • 1⅔ c. flour
  • ¾ tsp. baking soda
  • ¼ tsp. baking powder
  • ¼ tsp. kosher salt
  • 1½ c. oats (rolled or quick cook)
  • Glaze:
  • 1 c. sifted powdered sugar
  • 4 T. pure maple sugar
  • hot water
Here's how...
  1. Preheat your oven to 350 degrees.
  2. In a mixing bowl, mix butter with brown sugar, and sugar.
  3. Mix in one large egg, plus ½ tsp. maple flavoring and ½ tsp. vanilla. Use a full teaspoon of vanilla if you don't have maple.
  4. In a separate bowl, mix the dry ingredients (flour, soda, powder, salt).
  5. Mix dry ingredients into butter sugar mixture until combined.
  6. Add in oats and mix thoroughly.
  7. Line cookie sheets with parchment paper and use a scoop to create balls o' dough about 2 T. in size. Give them lots of room to spread as they make a large, thin cookie.
  8. Flatten them a bit and bake them for 11-13 minutes or just until the edges begin to turn golden brown.
  9. Cool completely and then move them to a wire rack over the parchment paper you baked with.
  10. In a bowl, whisk 1 c. of sifted powdered sugar with 4 T. pure maple syrup. Add tiny bits of hot water until the glaze is a good drizzling consistency. Use a spoon to drizzle stripes of yum over the cooled cookies. Or, if you're feeling extra fancy, pipe it on using a piping bag fitted with a small tip.
