Apple Pancakes

Warm, hearty and barely sweet, these pancakes put a whole new spin on pancake breakfast. Or dinner for that matter. Serve with applesauce or maple syrup and a star is born.

  • ½ c. butter
  • 2 c. milk
  • 2 c. grated tart apple (4-5 apples)
  • 2½ c. flour
  • 2½ tsp. baking powder
  • 1 tsp. cinnamon
  • ¼ tsp. ground nutmeg
  • 2 T. sugar
  • 2 eggs
  • ½ tsp. vanilla
  • Extra butter for the pan.
Here's how...
  1. Melt buter in milk in a small pot over low heat. Let it cool.
  2. Grate 2-3 tart, peeled apples with a box grater.
  3. In a large mixing bowl, mix flour, baking powder, sugar, cinnamon, and nutmeg.
  4. Make a well in the center of the dry ingredients and add the cooled milk/butter to the center.
  5. Gently whisk the wet and dry ingredients together.
  6. Also, gently whisk the eggs and vanilla in as well.
  7. Gently fold in the grated apples.
  8. Do not over mix. Stir just until combined.
  9. Heat a griddle or skillet to medium. Pour the batter in about ½ c. at a time. Take your time cooking these as they are dense and will need time to cook through. Flip when golden brown.
  10. Add butter to the pan with each new batch of batter going in.
  11. Remove the cooked pancakes to a platter to keep warm in a 170 degree oven while you prepare the rest.
