Best Blueberry Muffins

Serves: 1 dozen
- 1½ c. flour
- ½ c. sugar
- 2 tsp. baking powder
- ½ tsp. salt
- 1 egg
- ½ c. milk or buttermilk
- ¼ c. oil (coconut)
- 1 c. blueberries
- Butter
- Cinnamon sugar
- Preheat oven to 400 degrees.
- Mix flour and sugar with baking powder and salt.
- Make a well and to it add egg, milk or buttermilk, oil. Mix wet ingredients.
- Gently mix wet and dry ingredients JUST until combined.
- Gently fold in blueberries.
- Grease muffin tin and sprinkle with cinnamon sugar.
- Fill muffin cups ⅔ full and sprinkle again with cinnamon sugar.
- Bake in preheated 400 degree oven for 18-22 minutes or just until tops are barely golden.
- Cool in pan for 10 minutes and then remove to wire rack to cool completely.
