Alison:
Serves: 4-8 thighs
Grocery List
  • 4-8 bone-in chicken thighs
  • 2 tsp. garlic powder
  • 2 tsp. chili powder
  • 1 tsp. salt
  • 1 tsp. cumin
  • 1 tsp. paprika
  • ½ cayenne pepper (adjust to taste)
  • 1 T. coconut oil
  • 6 T. honey
  • 2 tsp. apple cider vinegar
Here's how...
  1. In a large mixing bowl, mix the following spices.
  2. Add in up to 8 bone-in chicken thighs and toss them around in the spices until coated.
  3. Preheat your broiler in your oven.
  4. In a cast iron skillet, a broiler pan, or large jelly-roll pan add 1 T. coconut oil and then spread the chicken thighs out as much as possible to make one layer.
  5. Broil them on high for 10 minutes on each side.
  6. While they are broiling, mix 6 T. honey and 2 tsp. apple cider vinegar in a small bowl.  After the ten minutes per side, brush half of the honey mixture over the chicken and broil another minute.
  7. Flip the chicken pieces and brush with the remaining honey mixture, and broil one more minute or until the chicken reads 170-175 on a meat thermometer. Take them out and let them rest for about five minutes before serving.
