Filled with all of your cheeseburger favorites like ground beef, ketchup and mustard, and oozy, gooey cheese, these savory little guys are a perfect snack, appetizer or after-school snack.

Serves: 1-2 dozen full-sized

  • 1 small onion
  • ½ lb. ground beef
  • 2½ c. flour
  • 1 T. sugar
  • 2 tsp. baking powder
  • 1 tsp. salt
  • ¾ c. ketchup
  • ¾ c. milk
  • ½ c. butter plus 2-4  T. for greasing the pans
  • 2 eggs
  • 1 tsp. yellow mustard
  • 8 oz. cheddar cheese
  • Extra ketchup and mustard for dipping
Here's how...
  1. Preheat oven to 425 degrees.
  2. Finely chop one small onion and brown it in a skillet with ½ lb. ground beef. Drain.
  3. In a large bowl, combine flour, sugar, baking powder, and sat.
  4. In a smaller, separate bowl, combine ketchup, milk, butter, eggs, and mustard.
  5. Grate cheese and add to the mixture along with the ground beef.
  6. Melt 2 T. butter and grease muffin tins VERY well.
  7. Fill muffin cups ¾ full and bake for 12 minutes if minis and 20 if full-sized. Check with a toothpick to see if they are fully cooked. Cool on a wire rack. Store leftovers in the fridge.
