Buffalo Shrimp Sandwiches with Avocado Ranch

Serves: 6 sandwiches
- Dressing:
- 1 large avocado
- ½ c. sour cream
- 2 tsp. parsley
- 2 tsp. dill
- ½ tsp. smoked paprika
- ¼ tsp. onion powder
- 1 clove garlic
- 1 tsp. worcestershire sauce
- ½ tsp. vinegar
- 2 tsp. hot sauce (Frank's)
- salt and pepper
- Buffalo Sauce:
- 1 stick (1/2 c.) butter
- ½ c. Frank's hot sauce
- 1 tsp. seasoned salt
- 6 ciabatta rolls
- 2 lbs. shrimp
- cheese (your choice, but I think bleu is the way to go)
- Put all of the dressing ingredients in a food processor and process until smooth and combined.
- Devein the shrimp and toss with the butter, buffalo sauce, and seasoning salt.
- Saute the shrimp in 1 T. butter for 3 minutes or until cooked through.
- Toast the ciabatta rolls if desired.
- Assemble the sandwiches with dressing, shrimp, and cheese.
