Buffalo Shrimp Sandwiches with Avocado Ranch

Tender shrimp exploding with buffalo flavor and a flavor-packed avocado ranch dressing make these sandwiches a quick and easy g0-to meal grand slam.

Grocery List
  • Dressing:
  • 1 large avocado
  • ½ c. sour cream
  • 2 tsp. parsley
  • 2 tsp. dill
  • ½ tsp. smoked paprika
  • ¼ tsp. onion powder
  • 1 clove garlic
  • 1 tsp. worcestershire sauce
  • ½ tsp. vinegar
  • 2 tsp. hot sauce (Frank's)
  • salt and pepper
  • Buffalo Sauce:
  • 1 stick (1/2 c.) butter
  • ½ c. Frank's hot sauce
  • 1 tsp. seasoned salt
  • 6 ciabatta rolls
  • 2 lbs. shrimp
  • cheese (your choice, but I think bleu is the way to go)
Here's how...
  1. Put all of the dressing ingredients in a food processor and process until smooth and combined.
  2. Devein the shrimp and toss with the butter, buffalo sauce, and seasoning salt.
  3. Saute the shrimp in 1 T. butter for 3 minutes or until cooked through.
  4. Toast the ciabatta rolls if desired.
  5. Assemble the sandwiches with dressing, shrimp, and cheese.
