When you need an extra something special to serve with your meal, this is your recipe. Pumpkin lends a slight savory flavor and a special autumn color to a fluffy, melt-in-your-mouth dinner roll. It's easier than you think to whip up a batch of homemade rolls.

  • 2 tsp. active dry yeast
  • 1½ c. warm water
  • ½ c. (1 stick) butter
  • ⅓ c. sugar
  • 2 eggs
  • 2 tsp. salt
  • 2½ c. whole wheat flour
  • 4½-5½ c. unbleached flour
Here's how...
  1. To the warm water, add 2 tsp. active dry yeast, give it a little stir and let it sit for a few minutes until the yeast dissolves and gets foamy.
  2. In a mixer bowl, combine the pumpkin puree, butter, sugar, eggs, salt and whole wheat flour.
  3. Pour the yeast water in and beat until smooth.
  4. Add in the all-purpose flour, adding enough to make a soft dough. I use my dough hook on my mixer and when the dough pulls away from the edges of the bowl and makes a slightly sticky ball. Let the dough hook continue to mix it for 4-5 minutes.
  5. If you are kneading by hand, the dough will come together with no shaggy pieces and mostly smooth, but stop adding flour when it still sticks to your fingers a bit. Continue to knead for 8 minutes.
  6. Place the kneaded dough into a buttered bowl and turn it over to grease the dough. Cover it with a clean dishtowel and put it in a warm place to rise for at least an hour or until it has doubled in size.
  7. After an hour, push all of the air out and divide it into four portions.
  8. On a very clean, lightly floured surface, roll each dough section into a circle and then use a pizza cutter or a sharp knife to cut each circle into 8-12 pie-like wedges. Roll them up starting from the wider end and place them pointed side down 2 inches apart onto a baking sheet. Curve the ends to form a crescent shape.
  9. Cover the pans, and place them in a warm spot and let it rise again for another 30 minutes.
  10. Bake in a preheated 400 degree oven for 12-15 minutes (edges will be golden) and remove to wire racks to cool.
