2-15 oz. cans of salmon
1 small onion
1 T. parsley
1-2 tsp. fresh lemon juice
½ tsp. pepper
½ -1 tsp. hot sauce
¼ tsp. garlic powder
1 c. bread crumbs
1-2 eggs

Here's how...
In a large bowl, combine chopped onion, fresh lemon juice, pepper, hot sauce, and garlic powder.
Drain the juice from 2 cans of salmon and reserve the juice if needed later.
Beat an egg and add it to the rest of the ingredients.
Finely chop leftover bread or crackers to create 1 cups' worth of bread crumbs.
Add them to the mixture and stir to combine.
Heat a skillet to medium high.
Make up a patty to see if it holds or needs another beaten egg to hold together.
Add butter to the hot pan and place 3-4 patties and cook them for 3-4 minutes per side.
Remove to a platter and keep them warm in an oven on the lowest setting.
Serve with fresh lemon.
