You can make these in minutes and the amounts are adjustable to your taste so it creates one very easy recipe for you to bring to your next football game or party — or for a perfect afternoon snack! Heck, I’d eat this for dinner pretty happily!

For more flavor options for your crostinis, check out my trinity of yummy crostinis — Cherry Almond Crostinis and Roasted Tomato Caprese Crostinis . I served all three as some of the appetizers when my son married his amazing bride two years ago.

To begin, slice a baguette into 1/4″ slices and lay them on a baking sheet (foil-lined means less clean up!), drizzle them with olive oil, and sprinkle with kosher salt and pepper. Bake them in a preheated 400 degree oven on the bottom shelf for 6-8 minutes or until crispy. The length of your baguette will vary and so the amount of every other ingredient will vary as well, so be willing to be flexible. I made about two dozen slices.

In the same oven, bake 4-6 slices of thick cut bacon on a wire rack placed into a rimmed baking sheet lined with foil for easier clean up, and bake until crispy — around 15-20 minutes. Of course you can fry it up if that’s easier. Dab as much grease off of the bacon with paper towel as you can and cut into little strips.

In a mixing bowl, mix together 4 oz. cream cheese with about 2-4 oz. of blue Cheese ( to your taste preference). Add salt and pepper to taste.

Once the baguettes have cooled, schmear each with the cheese mixture, evenly distribute the bacon pieces and arrange on a serving tray. Just before serving, drizzle with honey (a good local honey is always the best choice).

And that’s it! Prepare to WOW whoever takes a bite! They’re gonna beg you to know what the magic is. Feel free to take the credit for a minute or two and then mention your favorite food blog, okay? :o)
