I have a son who hates to eat anything green — same son requests this Four Cheese Spinach Artichoke Dip frequently!  :o)  We’ve all had lots of versions, right? After many trials and remakes, this is our favorite version.  I developed this recipe with Parmesan, Mozzarella, and Cheddar, and cream cheese, and lots of garlic to make this the creamy version you’ve been looking for.  Mix the whole thing in one bowl and bake in either a baking dish or a hollowed out loaf of gorgeous bread.  Serve with toast crisps or crackers or the chunks of bread from the bread bowl.  Cheesy perfection!

To begin, assemble all of your ingredients.

Chop 2 tsp. garlic.

Grate 2 c. mozzarella,

3/4 c. fresh Parmesan (fresh is best — the green can stuff is processed and makes it gummy),

and 1/4 c. white Cheddar (orange works, too).

Drain 1 can of artichokes, and roughly chop.

Thaw one cup of frozen spinach and drain well, squeezing out any water in paper towels.

In a small bowl, mix the following ingredients with a mixer until smooth:

8 oz. cream cheese,

1/4 c. mayonnaise

1/4 c. sour cream.

Fold all ingredients together.

Spread into a shallow baking dish or bread bowl and bake in a preheated 400 degree oven for 20 minutes.

Serve with crunchy toasts (as pictured), chunks of bread from the bread bowl, crackers, or tortilla chips for dipping perfection!

  • 8 oz. frozen spinach
  • 1 can artichokes, chopped
  • 8 oz. cream cheese
  • ¼ c. mayonnaise
  • ¼ c. sour cream
