Sweetened peanut butter with the crunch of crispy rice cereal dipped quickly into melted chocolate makes a whole bunch of happy Christmas-treat-eaters with very little fuss for you — an easy, no-bake, last-minute dessert!

I see those tricky little peanut butter chocolate treats that are hard to dip without a huge mess all over you and all over the kitchen! Not these babies! Let your mixer mix up the peanut butter mixture, roll ’em into balls (big or little — depends on your preference) and give ’em a quick dip in melted chocolate. Easy peasy. Gosh, they make folks happy! We’ve enjoyed them for decades! You could give these away and be some kinda Christmas treat hero and you won’t even have to turn on the oven!

Let your mixer mix the following ingredients:
- 1 c. powdered sugar
- 2 T. melted butter
- 1 c. creamy peanut butter
- 1 1/2 c. crispy rice cereal
Form this mixture into balls around 1 inch big or so depending on how many people you’d like to serve. Chill them in the fridge while you melt the chocolate or until they’re not sticky to work with.
In a double boiler (I use a bowl over a saucepan with 2 inches of boiling water and stir until the chocolate melts), melt 1 1/2 c. milk chocolate chips with 1/2 T. refined coconut oil which will help the chocolate set up well.
Dip the chilled pb balls into the melted chocolate to coat about 1/3 of each ball. Set it on a platter and chill to store. Serve at room temperature. That’s it! Now you have an easy-peasy, no-bake Christmas (or any day) treat everyone will love you for!
